If you need easy sandwich recipes, I feel you! You’re probably in a hurry, or never have time for breakfast or lunch. Or maybe you’re not really a cook and don’t know / want to meal prep all the time? Maybe you’re just feeling lazy right now. Either way, like I said, I get you!
This is me 70% of the time, especially when it comes to having lunch while working from home. I think I’ve googled “easy lunch recipes” at least twice this past week. It’s hard enough to cook every night, but since most of us are now at home, we need to figure out breakfast and lunches, too. The horror!
And this is where this post comes in, hopefully to help you out. Below you will find 10 easy sandwich recipes that don’t include just ham and cheese.
Some are vegan (hello, avocado bagel), others have plenty of protein (like the hot roast beef one). Some are easy to slap on (like the smoked salmon bagel), others require a bit of cooking (roasted vegetables grilled cheese sandwich). But all are equally delicious and (relatively) easy to make.

Turkey Caesar Sandwich
Can you really go wrong with a Martha Stewart recipe? I think not. This is a classic, easy sandwich recipe that takes it to the next level with its choice of seasoning (Worcestershire sauce and Parmesan). Definitely try it when you’re in the mood for a turkey sandwich!
Roasted Red Pepper Hummus, Avocado, & Feta Sandwich
I’m salivating just looking at this picture….and reading the ingredients. This tasty sandwich has everything I love: roasted red pepper, avocado, hummus, feta….What more can I ask for? I already added the sandwich on my meal plan for next week, I will let you know how it goes.
Smoked Salmon Bagel
This is, again, a very easy sandwich to make. Some cream cheese, some smoked salmon, a couple of cucumber and onion slices, and you’re done. Crunchy and filling, perfect for breakfast or lunch! I’ve had this in the past, but without the onions and capers, so now I have to try this version, too. It looks delicious!
Chickpea salad sandwich
If you’re looking for an easy sandwich recipe that looks delicious, stop here. I already tried it and it’s definitely going on my list of tasty sandwiches. It has few ingredients, too: chickpeas, onions, celery, pickles, mayo. You probably already have everything you need to make it, so go for it!
Avocado Bagel Sandwich
Here is another vegan tasty sandwich you can try right now! It has avocado and packs a lot of extra flavor from the sprouts, flax seeds, hemp seeds and pumpkin seeds!
Roasted Vegetables Grilled Cheese sandwich
We can’t really have a list of tasty sandwiches without a roasted vegetables one, right? You just have to know which vegetables to choose, and this recipe definitely hit the jackpot. It has asparagus, mushrooms, peppers and spinach, and it’s loaded with grilled cheese. What a winner! Tasty and healthy, and great for winter meals. too.
Deluxe Egg Salad Sandwich
This easy sandwich recipe is for all you egg-lovers out there. Again, it’s a tasty and filling recipe, and one you can make more ahead of time. It lasts for up to 5 days in the fridge, so you can do it on Sunday and have it for the rest of the week. I also suggest paying attention to what bread you are going to use. Don’t just put it on a piece of white bread. Instead, use bagels or croissants or something similar.
Caprese Sandwich
I have a soft spot for anything basil and anything grilled, so when I discovered this caprese sandwich which contains basil, tomatoes and arugula, and is grilled, I got giddy. The balsamic vinegar gives it an extra lovely taste. I recommend it in a smaller size and served as an appetizer, as you would do with bruschetta.
Hot Roast Beef Sandwich
This particular sandwich recipe is not an easy one to make, I know, but I think it’s definitely worth it. Mainly because it’s very filling and is full of protein. Since you are spending time making the roast beef, I suggest making it for multiple servings and preparing the final sandwich on the spot, not beforehand, for more than one meal.
Jalapeno Popper Sandwich
This is for all you spicy good lovers out there. And if jalapeno is not enough, this particular sandwich also has grilled cheese AND bacon. Delicious and filling, great for winter nights.
